Buttery Garlic Chilli Mushrooms

Buttery Garlic Chilli Mushrooms are these flavourful mushrooms that is a popular with all mushroom lovers. This an easy appetizer that goes well with a drink or as a side with your favourite noodle or rice dish. Garlic Butter Mushrooms are commonly served in pubs, restaurants and many Asian food trucks. But adding some chilli flavourĀ  onto this dish gives it that nice spicy twist. You can add any store bought or homemade chilli sauce. I like the Indonesian condiment called 'Sambal Oelek' which is made of fresh red chillies and no added fermented products. You can also add any herbs of your choice to this recipe. My personal favourites are rosemary, thyme, oregano, parsley or cilantro. If you don't have fresh herbs, add in dried herbs, just half the quantity. This one is a umami loaded dish. Mushrooms are a low carb vegetable. Ingredients
  • 650 gms. white button mushrooms
  • 1 medium onion (chopped fine)
  • 7 cloves garlic (chopped fine)
  • 2 tbsp. butter
  • 2 tbsp.olive oil
  • 2 tsp. chilli paste
  • 2 tbsp. white wine vinegar
  • a little salt to taste
  • 2 tsp. herbs of choice (rosemary, oregano, cilantro etc.)
Instructions
  1. Clean mushrooms with a damp cloth or napkin, removing all the dirt and keep aside. Do not wash mushrooms as they will get soggy.
  2. Melt butter and olive oil a pan or wok and saute finely chopped onion for a couple of minutes.
  3. Now add mushrooms to the pan and saute on high flame for about about 2 minutes and then add chopped garlic.
  4. Saute on high flame for about 4 minutes, then add salt and chilli paste.
  5. Switch off flame and transfer garlicky chilli mushrooms onto a serving platter.
