3
tbsp. oil
-
a
few coriander leaves

Instructions
-
Wash one large egg plant (weighing about 250 gms.), remove the edges and keep aside.
-
Take all the spices - chilli powder, turmeric, coriander powder, cumin powder, garam masala, garlic powder, chaat masala along with flour, sugar and salt in a medium bowl and mix well.
-
Now cut the egg plant into thick rounds, about 2cm each.
-
Roll each piece in the prepared spice mix. Leave it aside for 10 minutes. The eggplant will release moisture and the spices will coat the egg plant pieces.
-
Now heat a tawa or frying pan with oil.
-
When the oil is hot, place the egg plant pieces on the pan and fry on medium heat for about 3 minutes or until golden brown. Then brush some oil on the top and flip the egg plant pieces and fry on the other side for 2 to 3 minutes more until the egg plant is fully cooked and crispy around the edges.
-
Take them out on a serving dish and serve Baingan Bhaja with rice and dal.
