Baingan (Begun) Bhaja – Crispy Pan Fried Eggplant

Ingredients
  • 1 large egg plant (brinjal)
  • 1 tsp. chilli pd.
  • 1 tsp. coriander pd.
  • 1/2 tsp. turmeric pd.
  • 1/2 tsp. cumin pd.
  • 1/2 tsp. garlic pd.
  • 1/2 tsp. sugar
  • 1/2 tsp. chaat masala (or amchur pd.)
  • 1/4 tsp. garam masala
  • a little salt to taste
  • 2 tbsp. besan/gram flour (or flour)
  • 3 tbsp. oil
  • a few coriander leaves (for garnish)
Instructions
  1. Wash one large egg plant (weighing about 250 gms.), remove the edges and keep aside.
  2. Take all the spices - chilli powder, turmeric, coriander powder, cumin powder, garam masala, garlic powder, chaat masala along with flour, sugar and salt in a medium bowl and mix well.
  3. Now cut the egg plant into thick rounds, about 2cm each.
  4. Roll each piece in the prepared spice mix. Leave it aside for 10 minutes. The eggplant will release moisture and the spices will coat the egg plant pieces.
  5. Now heat a tawa or frying pan with oil.
  6. When the oil is hot, place the egg plant pieces on the pan and fry on medium heat for about 3 minutes or until golden brown. Then brush some oil on the top and flip the egg plant pieces and fry on the other side for 2 to 3 minutes more until the egg plant is fully cooked and crispy around the edges.
  7. Take them out on a serving dish and serve Baingan Bhaja with rice and dal.

Make Baingan Baja once you are ready to eat. This dish is best served piping hot.
